Leche Flan

We love leche flan! Who doesn’t? Leche flan is one of the desserts that can also be considered as comfort food.

Here is a slice of our super yummy leche flan that has more eggs than the usual leche flan recipe:

This means I really have to read more on www.weightlosssupplement-s.com because the kids and the hubby have been requesting I make this more often. Sweet temptations like this leche flan is my waterloo and yes, I admit, there are times I have more than I should eat.

Click here for the recipe. Be prepared to have purchase more eggs than the usual though. You can also use the egg whites for another batch though this is not as creamy and as filling as the leche flan cooked with egg yolks.

January 2011 Philippine Flood

I am devastated seeing the flooding of several provinces in the Visayas areas where the rains have been falling since December 2010 till today.

The destruction to lives and properties is overwhelming considering these are not really well-to-do provinces where a lot rely on agriculture for their livelihood.

Australia and Brazil are suffering the same sad state. The USA and Europe are blanketed by snow. Birds are falling dead from the sky. Scary yes but these weather-related have been here millions of years ago, long before men have destroyed the environment.

My Investment

Real estate properties, jewelry and financial stocks are some of the ways people invest their money. Some buy gold while some acquire businesses getting more than what they have invested once these businesses turn in profit.

As for me, my investment would be the education of my children. Yeah, corny huh but then again, even with a two-income family, we still have difficulties making ends meet and more often, we try as much as we can to have simple fun or home cooked meals which can happen even without getting the wallet to pay for a bill or purchase.

I love my family and I’ve devoted a lot of time, energy and love in nurturing my children.  I didn’t even go back to full time work even if the formerly home-schooled children are now in a regular school. I still teach a handful of students but being there for them when they get home is a joy I’d like to cherish for a long time. Yeah, even if I have to wake up at 4am everyday to prepare their packed food.

New Old

Hubby bought a slight-used (according to him) laptop yesterday after scouring laptop deals in the web for several days. He got a Dell Latitude e6400. He said the price he got it for was good enough and less than what is being offered in the other sites he saw.

This is just timely since the pc has conked out and is running on Ubuntu. The children say they miss their Win-based games and are begging me to have these installed in my laptop. Uh-oh.

Wait, does it mean I can now “inherit ” his netbook? Hmmm…

Ted Williams

Ted Williams, the golden-voiced former homeless man is one inspiring story for the start of a new year.

Of course, what he came to be by way of drugs and alcohol is not at all something that is inspiring but because he has a talent, a “golden voice” that captivated millions of people, Ted Williams was given great opportunities for another chance to be a better person.

We need inspiring real-life stories such as this to lift our spirits and be challenged to do more than we can.
